Tucked away on Rue Dupetit-Thouars in the 3rd arrondissement sits the latest chapter in Paris’ coffee renaissance. Australian barista Chris Nielson, previously at Ten Belles, has opened his own space designed by his wife, architect Emelie Nielson. Don’t be fooled by its small size – aside from Chris’ inarguably excellent coffee skills (made with beans sourced from Belleville Brulerie) this more-than-a-hole-in-the-wall packs a lot of punch – it even offers a pocket-sized terrace with axial views down to the pretty Square du Temple. Chris greets customers and commands the machine from behind a moulded concrete bar, against a dramatic backdrop of warm, Corten steel. Customers can either huddle and chat at the side bench or sit inside or outside at the custom-designed wooden tables and chairs, draped with luxurious Swedish sheepskins.
It’s worth noting the café is open seven days a week from 8am, for those working around the area. Whether after work or play, with great coffee and a small selection of locally-made sweet treats such as granola or black sesame and pear cake tempting you to stay, Fondation Café is the perfect Haut-Marais pit stop to rest and refuel.
